What Defines a Brownie?

A brownie is a cross between cake and a cookie, baked in a pan and cut into squares or rectangles, usually described as a baked chocolate dessert bar.

By comparison, brownies are the middle child of cakes and cookies, softer than a cookie, and then denser, richer, and often more moist than cakes, thanks to their higher fat-to-flour ratio.

Unlike their cookie brother, brownies are sliced after baking instead of being portioned individually and then baked.

At their core, brownies from scratch are typically defined by:

  • Chocolate flavor: Either from cocoa powder, melted chocolate, or both.
  • Dense, moist texture: Somewhere on the fudgy-to-cakey spectrum.
  • Simple ingredients: Flour, sugar, eggs, butter, and chocolate,

Basically, their simplicity is what makes brownies a timeless treat—and the perfect canvas for fun variations. These variations could be anything from chopped nuts or chocolate pieces to raspberry cheesecake swirl or pumpkin pecan, and even more unique brownie ideas.

A Brief History of Brownies

Brownies were first created in the late 19th century in the United States. The earliest published recipes appeared in community cookbooks in the 1890s, though the exact “first brownie” is debated.

As a matter of fact, one story claims brownies originated at the Palmer House Hotel in Chicago in 1893, when a pastry chef was asked to make a dessert that was smaller than a slice of cake but still portable for boxed lunches.

Thus, this brilliant chef concocted a dense, chocolatey bar topped with apricot glaze and walnuts.

After that, it is 1898 when inside the Sears, Roebuck, and Co. catalog sits the first published brownie recipe, which during this time was said to have resembled more of a molasses cake bar.

Meanwhile, six more years pass, and in 1904, THE brownie recipe is published within the Service Club of Chicago’s cookbook, and it was very similar to today’s modern brownie.

In essence, brownies have evolved from simple chocolate bars into endless varieties—some fudgy, some cakey, some swirled, some stacked high with toppings. Today, they’re a symbol of comfort, baking, and creativity in the kitchen.

cakey brownies

Fudgy vs Cakey Brownies

At any rate, let’s put aside the endless debate of “the chicken or the egg question,” and really get down to business: do you prefer fudgy or cakey brownies? Here’s what sets them apart:

Fudgy Brownies

  • Texture: Dense, rich, and moist (almost like chocolate fudge).
  • Ingredients: More fat (butter/chocolate), less flour, sometimes an extra egg yolk.
  • Mixing: Stirred just until combined—less air means more density.
  • For you if: You’re a true chocoholic who wants every bite to feel indulgent.

Cakey Brownies

  • Texture: Lighter, fluffier, with more structure—like a denser chocolate cake.
  • Ingredients: More flour, slightly less fat, sometimes more eggs (egg whites add lift).
  • Mixing: Eggs and sugar are often beaten to incorporate air.
  • For you if: You like your brownie to lean closer to cake, perfect with milk or ice cream.

Quick Tip:

  • Want fudgy brownies? Use more chocolate and butter, less flour.
  • Want cakey brownies? Add a little more flour and beat your eggs well.

In general, most homemade brownie recipes fall somewhere in between, giving you chewy brownies that balance the best of both worlds.

How to Store Brownies

Brownies keep well if stored properly:

  • Room Temperature: Store in an airtight container for up to 3–4 days. Place a slice of bread in the container to keep them soft and moist.
  • Refrigerator: They’ll last about a week, but refrigeration may make them firmer. Just bring to room temperature before serving for the best texture.
  • Freezer-Friendly: Yes, brownies freeze beautifully! Wrap individual pieces tightly in plastic wrap, then store in a freezer-safe bag. They’ll last up to 3 months. To enjoy, thaw at room temperature or warm briefly in the microwave.
